One of my favorite foods is pancakes, and this is one of the best pancake recipes around. It’s good because these pancakes taste amazing and because making them only requires four ingredients. That’s my kind of recipe! It can also be made into waffles, if you prefer. And while you can’t store the batter in the fridge if you have some leftover (something about the effervescence from the 7-Up), you can make extra pancakes from the batter, put them in the freezer, and then pop them in the toaster when you’re looking for a really quick pancake breakfast or midnight snack. I’m guessing now you’re dividing yourselves into two groups: those who wouldn’t dream of eating toaster pancakes (or anything for that matter) for a midnight snack, and those who would. I’m obviously one of the latter. Enjoy!

2 cups Bisquick
1 egg
1/2 cup oil
1 1/3 cups club soda or 7-Up
